I have been on a baking kick lately.

It all started when I read Freckles & Fences post about a Pumpkin Cake with only 2 ingredients :: a box of yellow cake mix and a can of pumpkin puree. That’s it! I had to try it. Be sure to read her post ~ the pictures alone make you hungry.
Another recipe I wanted to try was Duncan Hines Applesauce Walnut Cake. Yum!

Finally, it is Apple Crisp time of year! This is the only cooked fruit dessert that I enjoy besides applesauce. {I’m just not a big fan of the consistency of cooked fruit in pies or cobblers.}

My All Time Favorite Apple Crisp
Preheat oven to 350 degrees.
5 cups (3-4) tart, peeled, cored & sliced cooking apples
1 tbsp lemon juice
1/2 c. sugar
1 tsp cinnamon
2 tbsp all purpose flourSlice the apples and toss with lemon juice in a medium size mixing bowl.
In a separate bowl, combine sugar, cinnamon and flour then sprinkle over apples.For the topping:
1 1/2 c. granola
1/2 c. all purpose flour
1/2 c. packed brown sugar
1/2 c. melted butterCombine all the topping ingredients, mix well & sprinkle over the apples.
Bake for 20-25 minutes or until golden brown.Serve warm ~ a la mode is best!
