Zoo Doos

Because the high temperature is going to be 10 degrees {wind chills could be 15 to 20 degrees below zero!} I’m staying in and making Zoo Doos! It’s a TeSelle family comfort food!

Ever since I was a kid, we’ve made Zoo Doos ~ our fancy schmancy name for No Bake Cookies. What’s more fun to say? No Bake Cookies or Zoo Doos? Yep, Zoo Doos. In reality, what do these cookies look like when they’re done? Piles of doo you’d see at the zoo, so, there ya go. Zoo Doos! Credit to the name & this particular recipe goes to a family I’ve known since I was 5. Thank you Hall Family for 35 years of delicious comfort food memories!

4 C. sugar
1 C. milk
1 stick of butter
3 squares of baking chocolate **

Put above ingredients in a large pot and bring to a boil. Stir continuously. Boil for 2 minutes while you keep stirring.

Stop stirring & remove from heat and add:

1 C. peanut butter
1 tsp. vanilla
pinch of salt
4 C. oatmeal {I prefer the quick 1 minute oats for this recipe}

Stir all together & drop by teaspoonful onto wax paper. Cool. Consume. {Makes about 75-90 Zoo Doos, which depends on the size of your teaspoonfuls but it’s enough to satisfy this family of 6 for 2-3 days!}.

** For the dorks in the room {basically I’m talking to myself here!} You can use baking cocoa powder as an alternative to baking chocolate squares. Just don’t be a dork like me and read the label where it says “1 tablespoon of oil plus 3 level tablespoons of Baking Cocoa may be substituted for 1 square 1 ounce unsweetened baking chocolate” and add oil. This dork {ME!} read that on the label and added 3 tablespoons of vegetable oil. I only made that mistake once! Runny Zoo Doo’s are not the consistency you are going for here!

Bake One Freeze One

Whenever I am away for a few days, I try to make sure there are a few easy meals that Greg can pop in the oven or microwave for a quick meal. This time I stocked our freezer & pantry with meals for the family since I will be gone for 7 days. Greg is completely capable of preparing meals and cooking. It’s just one less thing he will have to do. Here’s a list of what I made & froze:

~ Sausage Breakfast Strata {pictured above}
~ Chicken & Broccoli Noodle Casserole Recipe {everyone in our family LOVED it!}
~ Taco Meat
~ Chili
~ Hamburger patties (bought 2lbs of ground beef, shaped them into patties & put them in individual sandwich ziploc bags)
~ Meatballs (so, I didn’t make these – just bought a bag at the store)

I stocked the pantry and fridge with side dish options like pasta, tortillas, taco fixings, chili fixings, vegetables, bread, etc. He will only need to make a grocery run for fresh fruit, produce & milk.

Recipe :: Crock Pot Pork Loin

I have been doing quite a bit of crock pot cooking lately, mainly because we do not have a stove right now. I made this last night and everyone loved it! I had to make a few adjustments to the recipe because I did not have balsamic vinegar so I just left it it out, and it still turned out yummy! It’s odd to find a recipe that all 6 of us like, and this turned out to be a winner. We will be making this again, only next time I will try it with the balsamic vinegar. {Make sure you click the picture and it will take you to the recipe.}

Catherine’s Italian Salsa

My friend, Catherine, shared this yummy Italian Salsa recipe with me a few years ago. It is so delicious & a crowd pleaser! Perfect for holiday parties!

Ingredients:

8 roma tomatoes, diced
8 green onions, diced
6 cloves of garlic, diced
1 sm. can diced green chilis
2 T. lime juice
2 T. cliantro, diced
1 c. Italian dressing
Sprinkle with Sea Salt to taste
4 c. shredded cheese {optional}

Dice & chop and combine all ingredients in a large bowl. Stir. It helps to let it sit in the fridge for at least 30 minutes to allow the juices & flavors marinate.

Right before serving, stir in the shredded cheese. Serve with your favorite tortilla chips.

{most people would probably wonder why adding cheese is “optional” but for those of us that need dairy free options, it tastes just as yummy without adding the cheese!}

31 Days of Our Lives :: Day 27 ~ Spaghetti Tacos


These are a big hit around here thanks to iCarly {a show I even love to watch with my kids!} All the credit for this recipe goes to the show:

Get taco shells.
Get spaghetti with meat sauce.
Get a BIG spoon.
Use the BIG spoon to put spaghetti into taco shells.
Eat.
Burp.

The only thing we add :: LOTS & LOTS OF SHREDDED CHEESE!

Make ‘em! Your kids will love them! And honestly, we almost always have these ingredients in our house, so on those nights where I suddenly realize it’s 5 o’clock and I have no idea what I’m going to make, we make Spaghetti Tacos.
